Food-grade ammonium bicarbonate (assay 99.2–100.5%) is a widely used leavening agent for biscuits, crackers and baked goods (E503), meeting bakery, FCC and GB 1886.17 standards. It is also used as a fermentation aid and pH regulator in food processing, and in feed, pharmaceutical, flue-gas desulfurization and nitrogen fertilizer applications. The product decomposes above ~60 °C, releasing NH3 and CO2.
